This micro-lot is 100% Caturra, a natural mutation of Red Bourbon, a variety discovered in Minas Gerais, Brazil. Caturra has risen to prominence thanks to its favourable attributes, such as higher disease and yield than Bourbon.
Norby inherited his farm, La Esmarelda, from his father almost thirty years ago. Like many of his peers, Norby successfully produced commodity coffee before entering the specialty sector. A decision he made to stabilize and improve his income during the coffee price crisis in the early 2000s.
Alongside adopting emerging varieties renowned for their quality, such as Pink Bourbon and Caturra, Norby partnered with Colombia producer and exporter Cofinet to market his coffee.
Together, they have developed meticulous processing methods, such as the 30-hour pre-pulping fermentation washed protocol used for this lot.
Following pulping, the parchment was washed ahead of temperature-controlled drying.
